Muesli & blueberry cookies

It's February...Be Heart Healthy! February is 'Heart awareness month'. Let's bake some cookies that is good for the heart. Studies have shown oats significantly reduce total cholesterol and LDL-cholesterol levels as well as fasting blood glucose. Oats are naturally gluten-free and a good source of beta-glucan, the soluble fibre that is good for your gut too. Have a bag of muesli ready...Let's bake!





Ingredients

(make 10 cookies)


100g Gluten-free Muesli*

75 g gluten-free plain flour

1 tsp gluten-free baking powder

3 tbsp extra virgin olive oil

2-3 tbsp maple syrup

2 tbsp dried whole blueberries

1 tsp vanilla bean paste

a pinch of salt


Blend the muesli, flour and baking powder in a food processor.

Mix the rest of the ingredients in a bowl, then add the dry ingredients and mix well.

Spoon onto a baking tray and flatten the top a little with a fork.

Bake at 160 degree C Fan oven for 15 mins, or until golden brown.

Leave to cool for at least 10 mins before removing from tray.

*containing porridge oats, coconut flakes, brown linseeds, sunflower seeds, chia seeds, pumpkin seeds, dates, raisin, sultanas, buckwheat flakes, poppy seeds, apricot, quinoa flakes
