Saffron Cake

Bake this beaufitul saffron cake on a dull day may help boost your mood! The pigment in saffron named crocin not only gives the vibrant golden yellow colour, but also has potent antioxidant and anti-inflammatory properties. Research has shown saffron may help improve sleep via modulation of the gut-brain axis!


Here we go, a natural sleep aid comes in great flavour! Let's bake...

Ingredients

(~ 8 servings)


  • 115g clotted cream (or use extra virgin olive oil for dairy free)

  • 1 tbsp extra virgin olive oil

  • 45g natural sweetener (e.g. Erythritol, natural stevia, maple syrup or honey if prefer)

  • 3 tbsp Inulin fibre syrup, plus 2 tsp extra for topping

  • 2 large organic eggs

  • 1/2 teaspoon vanilla bean paste

  • 75g gluten-free self raising flour

  • 80g almond flour

  • 1 teaspoon baking powder

  • 1/4 tsp ground saffron

  • 1 lemon, zest

  • 3 tbsp oat milk

  • a pinch of sea salt

  • a handful of chopped pistachio nuts


Method


  • Blend together the clotted cream, extra virgin olive oil sweetener, Inulin syrup, eggs, vanilla, lemon zest, salt and saffron.

  • Add the gluten-free flour, baking powder and almond flour to the mixture and mix well.

  • Add the oat milk and blend until the mixture begins to thicken

  • Bake in a loaf tin at 160 degree C (fan oven) for about 35-40mins or until cooked perfectly

  • Remove the cake from the oven. Then drizzle 2 tsp of inulin syrup and sprinkle chopped pistachio nuts on top and let it cool down in the tin.

  • Enjoy it with a cup of your favourite tea
