Saffron Cake

Bake this beaufitul saffron cake on a dull day may help boost your mood! The pigment in saffron named crocin not only gives the vibrant golden yellow colour, but also has potent antioxidant and anti-inflammatory properties. Research has shown saffron may help improve sleep via modulation of the gut-brain axis!
Here we go, a natural sleep aid comes in great flavour! Let's bake...

Ingredients
(~ 8 servings)
115g clotted cream (or use extra virgin olive oil for dairy free)
1 tbsp extra virgin olive oil
45g natural sweetener (e.g. Erythritol, natural stevia, maple syrup or honey if prefer)
3 tbsp Inulin fibre syrup, plus 2 tsp extra for topping
2 large organic eggs
1/2 teaspoon vanilla bean paste
75g gluten-free self raising flour
80g almond flour
1 teaspoon baking powder
1/4 tsp ground saffron
1 lemon, zest
3 tbsp oat milk
a pinch of sea salt
a handful of chopped pistachio nuts
Method
Blend together the clotted cream, extra virgin olive oil sweetener, Inulin syrup, eggs, vanilla, lemon zest, salt and saffron.
Add the gluten-free flour, baking powder and almond flour to the mixture and mix well.
Add the oat milk and blend until the mixture begins to thicken
Bake in a loaf tin at 160 degree C (fan oven) for about 35-40mins or until cooked perfectly
Remove the cake from the oven. Then drizzle 2 tsp of inulin syrup and sprinkle chopped pistachio nuts on top and let it cool down in the tin.
Enjoy it with a cup of your favourite tea
